Gary Colles has been trained in cheese making by noted experts Ricki Carol of New England Cheese Making Company and Peter Dixon of Farmstead Cheese Making in Pennsylvania, plus at Glenngarry Cheese company in Canada and Michigan State University. Gary has been teaching artisan cheese making classes for 15 years. He enjoys showing students how to use common kitchen equipment to turn milk into “cheese magic.”
